Food is certainly an essential component to getting the best results out of your training. Good quality food takes time to cook and as much as I would like to cook 3 delicious meals a day, we don’t all have time for that. Therefore some prep is required. The issue with traditional meal prep is that it loses the taste and enjoyment of the meals you're eating. This recipe is one of the many I use to make great tasting food with minimal cooking. This recipe was featured in a video discussing more details on simple meal prep.

Servings: 2-4

Prep Time: 5 Minute

Cook Time: 30 Minutes

Bulk Ingredients:

  • 1kg of chicken legs

  • 1 -2 medium red onion

  • 2 garlic clove

  • 1-2 bell peppers

  • 1 -2 handful s of cherry tomatoes

  • 1-2 tbsp olive oil

Spices:

  • 1 tbsp paprika

  • 1 tsp oregano

  • Salt & pepper

Preheat the oven to 200˚c (180˚c fan, 390˚f). Roughly chop the bell peppers, red onion and garlic cloves. Place the veg, including whole cherry tomatoes, into a deep roasting dish. Add the spices, salt & pepper and a good lug of olive oil. Give everything a shake until equally coated. You can additionally add chunks of chorizo to this for extra flavour.

Add the chicken legs, split into thighs and drumstick, to the roasting with the veg. Give it another shake then evenly place the chicken over the tray. Place in the oven and bake for 30-40 minutes or until juices run clear.

Remove the tray from the oven and set on the side. The fat and juices from the chicken and veg should have rendered to create a deliciously spiced sauce with the paprika and oregano. Serve up by itself or with rice, potatoes or anything else and enjoy.
